100 g olive oil
1 kg lamb meat (from the leg)
4-5 fresh green onions, chopped
200 g butter
500 g yogurt
thyme
oregano
some dill, chopped
4 pieces cooking paper, cut in 20cm stripes

Cut the lamb to 4-6 portions (or ask your butcher to do it for you), bleach them in hot water and then let them cool.

Saute the onions with the butter, add the oregano, thyme, dill, yoghurt, oil, salt and pepper and let them stand in a bowl for about 1/2 hour.

Preheat the oven at a medium temperature. Start folding the portions of the lamb as follows:
Spread the cooking paper stripes over a table and place at the edge of each a portion of the previously made mixture and a portion of lamb. Fold each paper to a small tight package. Make sure that the meat is surrounded by the mixture.

Put the packages in a greased roasting pan and put them in the oven. Let them roast for 2 hours.

Serve hot with the paper.
