Boil the water, wine, carot, onion and bay leaf in a pot for 15 minutes. Add salt and pepper.
Wash the shrimp or prawn and add them to the pot. Let them simmer for 6-8 minutes. Remove them from the fire, drain them and let them cool.
When they are cold remove them from their shells.
Garnish them with boiled eggs, pickles, red and green pepper and salad leaves. Serve them with mayonaisse.
