A traditional greek recipe with beans and tomato sauce.
4 tomatoes
500 g lima beans
3 garlic gloves, chopped
1 onion
1 cup(s) olive oil
1 tablespoon(s) parsley
thyme
Put the beans in water and let them soak overnight. Boil them until they are soft and drain. Peel and chop the tomatoes, place them in a bowl and add salt, pepper, garlic, olive oil and parsley. Mix well. Spread the beans in a baking pan and cover them with the tomato sauce.
Bake the gigantes in a preheated oven at 170 C for about 40 minutes. Serve sprinkled with thyme.
NOTES: Before you put the Gigantes in the oven you can add 6 strips of bacon.
