220 g calamari (squid)
1 teaspoon(s) olive oil
1 cup(s) fresh tomato sauce
3 piece(s) garlic
1/4 teaspoon(s) basil
2 teaspoon(s) lemon juice
3 teaspoon(s) grated romano cheese
3 laurel leaves

Slice the calamari into rings while separating the tentacles. Alternatively buy frozen which is already sliced.
 
In a saucepan, combine the tomato sauce, lemon juice, garlic, pepper, basil, laurel leaves and simmer on low heat for about 10 minutes on low heat. Add the wine and allow another 10 minutes at which point you should add the cheese. Leave it on low heat for another 5 minutes.
 
Add the calamari slices to the sauce. Continue to slowly simmer for another 5 minutes at which point add the olive oil and cook for another 3-5 minutes. Do not cook the calamari on higher heat or for longer because it will turn "rubbery".

NOTES: Frozen calamari takes less time to cook. Should you cook it on high heat it will turn rubbery really fast.
