Boil the chicken in a deep pot with enough water to cover it. After it starts to boil, add the olive oil and the onions. Let them simmer for about an hour.
Remove the froth periodically with a spoon.
Remove the chicken and add the rice. While the soup is boiling, remove all the chicken bones and add them to the soup. Add salt and pepper. Shred the chicken to pieces and add 2 cups of it to the soup.
After 10 minutes, or when the rice is ready, remove the bones from the soup. Add some freshly ground black pepper and serve.
NOTES: You can use the rest of the boiled chicken to make a chicken salad.
