A healthier approach to this well known dish. Just sauté the onion and garlic with water instead of oil.

1 kg peas |
 |
|
300 g tomato puree |
 |
|
1 big onion, chopped |
 |
|
4 tablespoon(s) olive oil |
 |
|
2 bay leaves |
 |
|
1 tablespoon(s) parsley, chopped |
 |
|
1 clove(s) garlic, chopped |
 |
|
salt and pepper |
 |
|
1 tablespoon(s) lemon juice |
 |
|
1 teaspoon(s) sugar |
 |
|
 |
In a large cooking pot sauté the onion and garlic in 1/3 cup water for 4-5 minutes.
Add the peas, tomato puree, olive oil, bay leaves, parsley, lemon juice, sugar, salt and pepper and 3 cups of water. Stir well and bring to the boil.
Simmer, covered, in low heat for 45 minutes. Serve hot |
