Basic tomato sauce with celery, carrots and fresh basil.
500 g ripe tomatoes, peeled and chopped
2 medium onions, chopped
1 celery, chopped
2 carrots, peeled and diced
8 fresh basil leaves, chopped
8 tablespoon(s) olive oil
parsley, chopped
salt
In a large skillet heat the olive oil. Add the tomatoes, onion, celery, carrot, basil and parsley. Season with salt and simmer, over medium heat, for 45-50 minutes.
Set aside to cool and pass through a food processor

Return the sauce to the stove and cook to the desired consistency.
