Haricot (pea bean) salad with onions, parsley and tomatoes.
250 g dried white pea beans (haricots)
2 onions, sliced
3 tomatoes
1 tablespoon(s) parsley, chopped
Khalta li-l-salata
If you are using dry beans, let them soak overnight. Strain, cover with fresh water and boil for 15 minutes or until tender. Add salt, skim and simmer 5 more minutes. Drain and let them cool.
Wash and dice the tomatoes. Slice the onions. Add tomatoes, onions and parsley to the beans. Mix thoroughly.
