A light, flavorful meal with couscous, chicken and a variety of spices.
3 chicken breasts, boned and skinned
300 g couscous
1 big green bell pepper
1 big green red pepper
2 tablespoon(s) olive oil
1 big ripe tomato, chopped
1 big onion, chopped
300 ml chicken stock
2 tablespoon(s) parsley, chopped
1 teaspoon(s) ginger powder
1 dash(es) cinnamon
salt and pepper
Heat some oil in a large pan and sauté the onion until soft and translucent. Add the couscous and the chicken stock. Let them simmer until all the liquid is absorbed.
Heat some oil in a large skillet. Cut the chicken and the peppers into small pieces and sauté for 8-10 minutes. Stir in the tomato and spices. Simmer for 5 more minutes, then add the couscous with the parsley.
