Cool cucumber salad with rice vinegar and coriander.
|

1 big cucumber, sliced |
 |
|
1 small onion, chopped |
 |
|
1 jalapeno pepper, finely chopped |
 |
|
5 tablespoon(s) rice vinegar |
 |
|
2 tablespoon(s) water |
 |
|
2 tablespoon(s) fresh coriander, finely chopped |
 |
|
1 tablespoon(s) sugar |
 |
|
1/2 teaspoon(s) sea salt |
 |
|
 |
Mix water, vinegar, sugar, and salt.
In a serving bowl arrange the cucumber, coriander, jalapeno pepper, and onion in layers.
Pour the sauce over the salad.
Refrigerate covered for 30 minutes before serving. |
