Fried fish patties with garlic, basil and red curry.
600 g white fish
1 egg
1 tablespoon(s) red curry paste
4 green onions, chopped
2 teaspoon(s) chili pepper sauce
3 clove(s) garlic
3 tablespoon(s) fresh basil, chopped
1 tablespoon(s) lime juice
2 teaspoon(s) fish sauce
1 teaspoon(s) sugar
oil, for frying
Cut the fish into small pieces and food process until well minced. Out in a bowl and set aside.
Food process the egg with the red curry until well blended. Add the chilli pepper sauce, fish sauce, basil, green onions, garlic, lime juice and sugar. Mix well.
Add the mixture to the fish and blend well.
Heat the oil in a large skillet.
Using a tablespoon form the batter into oval cakes. Fry the cakes for 3-4 minutes on each side or until crisp and golden brown.
Drain them in paper towels and serve with a sweet dipping sauce.
