Callaloo is a Caribbean dish popular in Trinidad and Tobago, Guyana, and Jamaica. Traditionally it is made with Callaloo leaves but outside the Caribbean spinach is commonly used.
1 bunch callaloo (or fresh spinach), chopped
50 g ham, diced (optional)
250 ml coconut milk
5 cup(s) water
1 large onion, chopped
4 clove(s) garlic, minced
230 g okra
230 g crab meat
scotch bonnet to taste
salt and pepper
Place all ingredients in a large stew pot except okra, crab meat, and spices.
Simmer covered for 25-30 minutes then add the okra and crab meat.
Simmer for 5 more minutes and season with salt, pepper and scotch bonnet.
