Spaghetti with pumpkin, shrimp, white wine and chilli.
340 g spaghetti or linguine
280 g pumpkin
170 g shrimp
1 medium sized onion, chopped
1 dash(es) chilli pepper
1 tablespoon(s) parsley, chopped
1/2 cup(s) white wine
4 tablespoon(s) olive oil
salt and black pepper
grated Parmesan (optional)
Peel the pumpkin and remove the seeds, cut into fine dice.
Finely chop the onion and sauté along with the chili pepper in a skillet with the olive oil. Add the pumpkin and cook for about 5 minutes.
Peel the shrimp and add to the skillet. Deglaze with the wine, season with salt and pepper and cook over high heat until the wine starts to evaporate.
Cook the pasta in salted boiling water until al dente. Drain and add to the skillet. Toss and serve sprinkled with parsley. If desired, it can be served with grated Parmesan too.
