Linguine With Pumpkin

Linguine With Pumpkin

340 g linguine
450 g pumpkin
170 g peeled ripe tomatoes, seeds removed, chopped
1 medium sized onion, chopped
milk
Salt and freshly ground pepper
Parmesan cheese
4 tablespoon(s) olive oil

In a skillet, warm the olive oil. Add the onion and sauté. Peel the pumpkin, remove the seeds and dice the pulp. Add to the skillet and sauté.

After 5 minutes, add the tomatoes and cook over low heat for about 15 minutes. Season with salt and pepper.

Cook the linguine in salted boiling water until al dente. Drain and add to the skillet with the pumpkin.

Add some milk and some Parmesan. Toss and serve with a grinding of pepper.
