Leeks and feta are popular in Greek cuisine and they match great in this pie! You can make variations by using yogurt instead of feta or add some yellow cheese.
sesame seeds (optional)
2 eggs
1 teaspoon(s) parsley, chopped
1 teaspoon(s) dill, chopped
3 green onions, chopped
2 pie crusts
3 medium leeks, chopped
200 g feta cheese, crumbled
salt to taste
olive oil
2 tablespoon(s) milk
In a large saucepan sauté the leeks and green onions for 10 minutes with the olive oil. Add the dill and parsley, stir, and remove from heat. Cover with a lid and set aside.
Beat the eggs and add the milk and feta cheese. Pour the egg-feta mixture over the leeks and mix well. Add salt according to your liking but keep in mind that feta is salty enough.
Grease a medium baking pan with some oil and place a pie crust at the bottom. Pour over the filling and cover with the second pie crust. Press the edges of the 2 crusts together with your fingers. Brush the top of the pie with some oil and sprinkle with sesame seeds. Make some incisions on the pie with a sharp knife.
Bake at 180C in a preheated oven for about 1 hour or until the pie is crisp and lightly brown.
