Make lemon-pepper marinade by mixing 2 tablespoons lemon juice and 1/3 teaspoon of pepper.
Put all the ingredients in a blender or food processor except of the lemon-pepper marinade. Blend until smooth.
Refrigerate 30 min or more, until mixture is firm.
Sprinkle lemon-pepper marinade on a sheet of wax paper. Shape the cheese mixture into balls with your hands.
Roll cheese balls in lemon-pepper marinade.
Cover and refrigerate. Serve cold with assorted crackers.
