If you are using fresh shrimp, wash and remove the shell. If you are using frozen shrimp let it defrost.
Bring 2 cups of salted water to a boil and add the rice. Cover with a lid and let it simmer, until almost done (remove 2-3 minutes before the end).
Heat the oil in a large skillet and sauté the mushrooms, shrimp, bamboo, peapods, baby carrots and spring onions for 7-8 minutes. Add the oyster sauce, soy sauce and rice and stir well. Turn the heat off and cover with a lid. Let it stand for 10 minutes and serve.
