Sweet with carrots, raisins, cashewnuts and khoya.
8-10 medium sized carrots
2 tablespoon(s) raisins
1/4 cup(s) pure ghee
1 cup(s) milk
1/2 teaspoon(s) green cardamom powder
1 cup(s) khoya, grated
8-10 cashewnuts
Wash, peel and grate carrots. Wash and pat dry raisins.
Heat pure ghee in a thick-bottomed pan, add grated carrots and sauté for 5 minutes. Add milk, green cardamom powder and cook on medium heat for 5-6 minutes or until the milk evaporates and the carrots are cooked.
Stir in tha grated khoya and sugar and cook for 2-3 minutes or till the sugar melts and mixes well, stirring continuously.
Add raisins and cashewnuts and continue to cook for 2 minutes more and serve at room temperature.
