Leek and Cheese Soufflé

1 kg leeks
100 g yellow cheese
2 eggs
100 g siglino (smoked pork)
50 g flour
50 g butter
200 ml milk
1 tablespoon(s) dill, chopped
2 tablespoon(s) olive oil
salt and pepper

Chop and sauté the leeks with the olive oil. Lower the heat and let them simmer until soft.

Mix the butter, milk flour and eggs in a bowl to make the bechamel.

Add the leeks, dill and siglino to the bechamel and stir.

Pour the mixture in a small-medium baking pan and top with the cheese.

Bake in a preheated oven at 200C until the cheese begins to brown.
