In cold days that will make you hot, happy and greedy for a second round!
The egg and lemon mixture make the difference!
3 tablespoon(s) lemon juice
2 eggs
750 g pork meat, diced
2 garlic cloves, chopped
250 g onions, chopped
3 tablespoon(s) parmesan cheese, grated
750 g fresh celery
Cut meat in cubes.
Wash and cut the celery in 2 inch pieces.
Heat some oil in a large pan and sauté
the meat cubes. When they become slightly brown, add the onions. Sauté for 4-5 minutes.
Add the garlic, salt and pepper.
Cover with a lid and let them simmer in low heat for 30 min.
Add the celery. Cover and simmer for 30 more minutes until tender. Add the cheese and switch off the stove but don't remove the pan just yet.
Break 2 eggs and separate yolks from whites. Beat the yolks with 3 tablespoons of lemon juice. Beat the whites separately until they bubble. Mix together yolks,the rest of lemon, pour in whites and add to the pan.
