Chicken In Orange Sauce

Chicken In Orange Sauce A gourmet's delight!

3 whole chicken breasts, boned, split, skinned
salt
1/4 cup(s) butter
2 tablespoon(s) flour
2 tablespoon(s) sugar
1/3 teaspoon(s) dry mustard
1/4 teaspoon(s) cinnamon
1/5 teaspoon(s) ginger
1 1/2 cup(s) orange juice

Sprinkle chicken with salt.

Melt butter in large skillet. Add chicken and brown both sides. Remove from skillet. Add flour, sugar, mustard, cinnamon, ginger and 1/2 teaspoon salt to drippings in pan. Stir to a smooth paste. Slowly add orange juice and cook, stirring constantly, until mixture thickens and comes to a boil. Add chicken breasts. Cover, lower heat and simmer until chicken is tender, 25-30 min.
