3 whole chicken breasts, boned, split, skinned |

salt |

1/4 cup(s) butter |
 |

2 tablespoon(s) flour |
 |
|
2 tablespoon(s) sugar |
 |
|
1/3 teaspoon(s) dry mustard |
 |
|
1/4 teaspoon(s) cinnamon |
 |
|
1/5 teaspoon(s) ginger |
 |
|
1 1/2 cup(s) orange juice |

Sprinkle chicken with salt.
Melt butter in large skillet. Add chicken and brown both sides. Remove from skillet. Add flour, sugar, mustard, cinnamon, ginger and 1/2 teaspoon salt to drippings in pan. Stir to a smooth paste. Slowly add orange juice and cook, stirring constantly, until mixture thickens and comes to a boil. Add chicken breasts. Cover, lower heat and simmer until chicken is tender, 25-30 min. |
