Beetroot Salad A traditional Greek salad

1/2 cup(s) olive oil
1 kg beetroots
4 tablespoon(s) vinegar

Wash the beetroots thoroughly and cut their leaves. Bring a pot of water to a boil and add the roots, salt and some vinegar. Let them boil for approximately 35 minutes.

Add the leaves to the boiling water and let them boil for 15 more minutes. Drain and cut into medium sized pieces.
Pour over the oil and the rest of the vinegar and serve.
